Ingredients

1 1/2 cups (375 mL) PC Blue Menu Bran Flakes
1 1/4 cups (300 mL) PC Organics Whole Wheat flour
1/4 cup (50 mL) PC Blue Menu Celeb Margarine - Original
1 tbsp (15 mL) baking powder
1 cup (250 mL) dried cranberries
1/2 cup (125 mL) granulated sugar
1 egg
1 cup (250 mL) 2% milk

Instructions

  1. Preheat oven to 400°F (200°C). Spray 12-cup muffin pan with PC Blue Menu Canola Oil Cooking Spray.
  2. In large bowl, stir together cereal, flour, baking powder and cranberries. In another bowl and using a wooden spoon, beat margarine and sugar until creamy; beat in egg, then milk. Pour mixture over dry ingredients. Stir just until mixed. Divide evenly among prepared muffin cups.
  3. Bake in centre of oven for 20 minutes or until golden.

 

Chef's Tips

Substitute dried cherries or raisins for cranberries, if you prefer.
